Christmas Pudding

Stir up Sunday today, and I made my Christmas Pudding.  I haven’t made one in 15 years because I had a disastrous experience with one.  Basically I was boiling it in a Tupperware basin, when a client rang me.  It was a very involved call, and I forgot about the pudding.  The resultant mess with the melted basin and pan, the hob which was never the same again and the clouds of smoke in the kitchen put me off puddings for a long time.

But this year I had a good idea (I thought of it myself, but I checked out on the Internet and other people have done it too) – I used the slow cooker.  I made the pudding and prepared the basin as usual, but instead of babying a pan along for hours, I put it in the cooker on the eight hour slow setting with boiling water half way up the side.   No fuss, no mess and it seems to have cooked perfectly.

These were the ingredients and the mix.

And eight hours later the outcome.

I will particularly enjoy this pudding because as I made it myself I did not put any candied peel into it (I always think it has a nasty bitter taste).
