A Scooby Snack

I made some bean burgers today – they were quite nice but perhaps rather dry.  I would use the recipe again, but put some homemade salsa in the roll to moisten things up.

They had rather a “Scooby Snack” appearance, but actually weren’t too difficult to eat as they weren’t as keen to fall to pieces as my efforts in the past have been.  The trick appears to be to dry any moisture off the beans with a paper towel before adding them to the mixture (2 cans beans of any sort, 100g rolled oats, 1 egg, 1 tblsp tomato puree, seasonings of choice).

Serve in a bun with fried onions and ketchup.  Couldn’t get easier, cheaper or healthier.
